Cordon bleu is a relatively tasty and fancy way of presenting chicken meat. It’s all about the technique, and once you get it down, you can iterate and be very creative with it. Let me introduce you to the delicacies of stuffed chicken.
Ingredients for 2 cordon bleus:
- 2 nice pieces of chicken breast
- about 50g of Tomme cheese
- one onion
- a tablespoon of sugar
- some flour
- one egg
- some breadcrumbs
Start by taking the chicken breast out of the fridge. Put it on a cutting board and, using a tenderizing hammer – or the back of a pan -, gently hit it in order to flatten it as much as you can without breaking its fibers too much. Once done, salt on both sides and let it sit in a plate while you are preparing the rest.
Slicing the onion in thinly. Put oil in a pan over a low fire. Once the pan is hot, add the onion, as well as one tablespoon of sugar. Let it simmer over a mid to low fire for 15 minutes, tossing it around from time to time. When done, put it in a small bowl and let it cool down a bit.
Cut the cheese in thin slices, then prepare what you will need to make the cordon bleus: have a space where you’ll stuff it, and then three recipients filled with some flour, then a battered egg, and finally, bread crumbs. Lay down the flattened chicken breast and put some cheese on half of it. On top of the cheese, add the onions. Close the cordon bleu by folding down the empty half on top.
Handle the cordon bleu with care – if you need to, use toothpicks to close it. Cover it with flour in the first recipient, then soak it in the egg, then cover it with bread crumbs. Repeat the last two step if the meat allows you. Reserve on a plate.
Once at that step, put the pan over the fire again and add some oil. Once hot, put the cordon bleus and let it brown for a few minutes on one side, then a few more minutes on the other one. Once it starts coloring, turn the fire down and cover, to make sure that the meat cooks through.
After a total of about 15 minutes, you shoud be good. Serve your cordon bleu with your sides of choice – mashed potatoes or green beans, for example. Also, don’t hesitate to be creative with your cordon bleu’s fillings ; you could put some ham, some tomato sauce, some mushrooms, as long as it’s not too stuffed.
